Instructions for this recipe

First, start by cutting the potatoes into fries. Using a mandoline is the easiest way to achieve the perfect size and uniformity.

Next, soak the slices in a large bowl of ice water. This process helps you achieve a super crispy fry by drawing out the excess starch and moisture from the potatoes.

If you were to deep fry these, it also helps to keep them from sticking together.

Soak them for a minimum of 30 minutes up to overnight.

After the soak, preheat the oven to 450. 

In the meantime, drain the potatoes from the ice water and dry them thoroughly with a clean kitchen towel and place them back into a mixing bowl. Be sure to really pat them dry.

Next, toss them with olive oil and coarse sea salt.

Finally, spread them out evenly in a single layer on a parchment paper-lined baking sheet.

Bake them for about 25 minutes, flipping them over halfway through for even browning and crispiness.

  • Soak cut potatoes in ice water for 30 minutes up to overnight in the fridge.
  • After soaking, preheat the oven to 450. Line 2 baking sheets with parchment paper and set aside.
  • Drain the water from the potatoes and dry them thoroughly with a clean tea towel.
  • Place them in a bowl and toss well with the olive oil. Sprinkle on the salt on toss again.
  • Spread potatoes evenly in a single layer on the prepared baking sheet. Ensure they are spaced out and not touching.
  • Bake in the oven for 23 minutes, flipping them over at the halfway mark.

    Sharon, your recipe looks great! I like how the amount of oil you use is minimal in comparison to what I get in restaurants!

    I’ve been looking for healthy store bought fries (not that easy to find), because I’ve tried making the homemade version at home in the pat and it didn’t turn out well.

    They actually turned out pretty limp and soggy and didn’t have the crispy exterior that I enjoy.

    I’m not sure if I didn’t cook it long enough or if I cut them too thick. I didn’t follow a recipe last time, so I will be sure to give yours a try when I have the time. Thank you.
