Buttery Chocolate Chip Mug Cake

Sounds pretty decadent, no? I’ve seen many a mug cake on the food sites I prowl and knew I had to create an Honour System version. The great thing about it is…it’s cake! A single serving for when you feel like something sweet but there is no way you’re pulling out the mixing bowls and baking dishes not to mention the clean-up. You also don’t want to eat multiple pieces of cake which is inevitable when one bakes cake. This little mug of joy is a pretty good fix when only cake will do.

To make my version a healthier one I’m making a couple of swaps. First things first I cut waaaaaayyyy down on the sugar. I used some coconut sugar and a little turbinado. Turbinado is a good  sub for brown sugar. It absorbs well and is good for baking. Turbinado is much less processed and refined than brown sugar.

Instead of all purpose flour I am using spelt flour. I love spelt. Keep in mind that spelt does contain gluten. It’s less gluten than typical grains but it is there. Thankfully, I don’t suffer from gluten intolerance but I do avoid wheat for other reasons…cough…GMO…ahem…#gettingpolitical

Melt a little pat of butter in a large mug. I used my 1 1/2 cup measure as it is microwave safe.

I put it in the microwave for 10-12 seconds then just stir the butter until the solids have dissolved. Be careful not to over cook the butter.

Crack in an egg and mix it well with the melted butter. Add in the rest of the ingredients, minus the chocolate chips and stir well. Let the mixture sit for a bit, maybe a minute or so. Spelt flour benefits from resting to absorb properly. Sprinkle on some chocolate chips. Use your own choc-o-meter…

And that’s all, folks! Pop it in the microwave for 45-60 seconds. It should feel a tad springy to the touch. Let sit for 5 minutes and then spoon away.

Now, keep in mind this is in no way the same thing as a traditional oven baked cake but it is scratch made and the true test was aced when I couldn’t stop shovelling it in:) Great healthy indulgence. I wish I had some coconut whipped cream left…

PS-I had some great successes with the spelt flour so if you do invest in a bag stay tuned for some more delicious recipes using spelt.

  • Melt the butter in an oven safe mug
  • Crack and egg into the mug and mix in with the melted butter

  • Let sit for 5 minutes before eating in one fell swoop:)
