Ingredients

FOR THE SALAD

  • cucumber – I prefer an English cucumber as they are a tad sweeter than regular cukes with a much thinner skin that you don’t need to peel.
  • tomatocherry tomatoes, vine tomatoes, and Roma tomatoes are all great options.
  • lettuce – I use romaine
  • bell pepper – any color!
  • red onion
  • feta cheese

FOR THE DRESSING

  • lemon juice – fresh squeezed
  • olive oil
  • garlic cloves
  • fresh mint – remember to inhale for some aromatherapy while you prep
  • feta cheese
  • salt
  • dried parsley
  • dried oregano

How to make a Greek cucumber salad

Start by adding the chopped veggies to a large bowl.

Next, make the greek salad dressing. Simply add the dressing ingredients to a small mason jar and shake it really well.

Finally, toss the salad with the dressing. Portion it out into bowls and top with feta cheese and sprinkle with oregano.

  • How do you keep Greek salad from getting watery? Cucumbers have a lot of moisture that can release and make for a watery salad. Using the lettuce in this recipe helps to absorb it- lettuce isn’t a traditional Greek salad ingredient. I also recommend enjoying this salad the same day. Leftovers just aren’t the same.
  • This salad is delicious alongside grilled meats like chicken, pork, or steak with a dollop of tzatziki sauce. It also pairs well with seafood like salmon, halibut, or cod. For vegetarian protein add some chickpeas or beans to the mix!
  • Another delicious addition to greek salad recipes is of course olives! Both kalamata olives and black olives leave a lovely hint of salty flavor.

Ingredients
  

FOR THE SALAD

  • 2 cups chopped cucumber
  • 4 cups chopped lettuce * I use romaine
  • ¼ cup chopped bell pepper
  • ½ medium red onion
  • 1 cup quartred tomatoes
  • ¼ cup feta cheese

FOR THE DRESSING

Instructions
 

  • Toss all salad ingredients in a large bowl, except the cheese and tomatoes.
  • Shake all of the dressing ingredients in a small glass jar and pour over the salad. Toss well, massaging the dressing into the leaves
  • Split into two large bowls and top with tomatoes and the feta cheese. Sprinkle with oregano and serve.
