How about some chocolate covered blueberries to brighten your Monday morning? Don’t mind if I do! 😉
This really easy creation was inspired by my wandering thoughts of summer. This February has been the longest, winteriest month ever. I’ve begun to wonder if this snowy, freezing weather ever ease up. So, instead of dwelling on the sub-zero temps outside, I’ve been mentally organizing summer plans. Last summer I spent some time on Vancouver Island in beautiful BC, Canada. It’s my home turf and I love visiting. Shawnigan Lake is a special place for my best friend Julie’s family. They’ve been creating summer memories there for decades and I’ve been lucky to have participated in a few wonderfully warm, sun drenched days there myself.
While I was there last summer, Julie’s husband broke out a bag of chocolate covered blueberries, straight from the freezer. The snap of the chilled chocolate mixed with the chewy sweetness of the blueberries were . so . good. I’m not even a huge fan of blueberries and I really liked them.
The time came where I knew I had to make these for myself when I saw organic dried blueberries in the bulk section of my grocery store. It was fate and it made me feel all fuzzy inside, like a bright July afternoon.
I melted down some dark chocolate chips with coconut oil, aka the world’s best ingredient ever. It becomes all shiny and glossy.
Next, toss the dried blueberries with the melted dark chocolate until they are well coated. Super hard, I know. 😉
Spread the dark chocolate covered blueberries onto a parchment lined baking sheet and pop into the freezer to harden and you are done.
They turned out exactly how I hoped they would. Chewy, chocolately and a nice punch of berry flavour. Highly recommended to help you through the winter lull.
Serves 1/2 cup
- 1/2 cup dried blueberries
- 1/4 cup dark chocolate chips
- 1 tbsp. coconut oil
- In a small sauce pan, add chocolate chips and coconut oil and set over low heat, stirring until melted and glossy
- Remove from heat and add the dried blueberries. Stir them well to coat each one
- Spread them onto a parchment lined baking sheet and place them in the freezer for about thirty minutes to harden. Transfer to a Ziploc bag and store in the freezer
