CHEWY GRANOLA BARS

Discover my new fave homemade chocolate granola bar. 

This healthy chewy granola bar recipe is kind of reminiscent of those Quaker brand chewy, chocolate-dipped granola bars we all thought were oh-so-good for us back in the day. Isn’t it funny what you used to think was ‘good for you’.

I considered Mr. Noodles to be a proper meal when I first lived on my own. For real. 

Yikes, right?

No yikes with these chewy bars though. These are yum all the way. And real food, too. No weird additives/preservatives or harmful ingredients. Isn’t that what treating yourself is about, anyway?

Quality is so underrated.

INGREDIENTS FOR THIS CHEWY GRANOLA BAR RECIPE

  • Maple syrup
  • Almond butter
  • Coconut sugar
  • Sea salt
  • Cocoa powder
  • Vanilla
  • Quick oats
  • Slivered almonds
  • Rice crisp cereal
  • Chia seeds

So basically everything but the kitchen sink goes in these. 🙂

HOW DO YOU GET GRANOLA BARS TO STICK TOGETHER

So how DO you get granola bars to stick together? There are a number of ways and usually, they all involve some kind of sugar. How much sugar is in a chewy granola bar? That varies from recipe to recipe.

For this no bake bar, I use a mixture of coconut sugar and maple syrup as the sweeteners that add to the chewy factor but also help to bind the bars together. While they do contain high calories like white sugar they also are less processed and still contain certain minerals.

If you are wondering if chewy granola bars are healthy, this is your answer. They are as healthy as you make them. 🙂

Avoiding sweet treats forever is sustainable for me so homemade and healthy as possible is my motto.

This mixture gets hard to stir but that means it will hold together nicely. So have patience and get the elbow grease going. 🙂

Press those chia seeds into the top! It gives your bars a nice snap when you bite in. Oh, and chia seeds are full of antioxidants, fiber, and protein.

These Chewy Chocolate Bars slice up super easily.

You could also cut them in half again if you are monitoring your portions.

Which I did not do.

Ingredients
  

Instructions
 

  • Line a 9×9 dish with parchment, lightly grease the paper and set aside.
  • In a large sauce pan over medium low heat, melt together the maple syrup, almond butter, coconut sugar and sea salt, stirring until smooth.
  • Remove from heat and stir in the cocoa powder, mixing until lump-free. Stir in the vanilla.
  • Stir in the oats, 1/2 cup at a time. It gets very hard to mix but that means they will hold together well. Stir in the slivered almonds, then fold in the rice crisp cereal.
  • Transfer the mixture to the lined 9×9 and press it in really well.
  • Sprinkle the top with chia seeds and, using the back of a spoon, press the seeds into the top of the mixture.
  • Set in the freezer for an hour, then slice into bars.
  • Store, covered, in the fridge or freezer for up to a week.

  1. These bars are TOO DELICIOUS! I kind of wish I had them rather than the 100 mini eggs I had. LOL! Only once a year though…actually its less than that, my frist Easter being in Canada in 5 years, so I think I deserve it. 🙂
