Well friends, this is one of those recipes.

Of course, I didn’t invent guacamole, and I’m sure a million recipes exist for it. This is my spin on the classic snack. It’s a perfect portion for one or can be used as a burrito stuffer or maybe even on a spicy rice bowl.

That is total foreshadowing, by the way. There may be a Burrito Bowl recipe in the not too distant future. Just sayin’.

This snack/side dish is healthy fats a-plenty! Healthy fats reduce inflammation and protect you from nasty illnesses.

Have you ever noticed that people have specific guacamole preferences? It’s like guacamole is similar to peanut butter in a way. Smooth or chunky. I enjoy a few bigger morsels of avo in my guac just like I choose chunky PB.

I also don’t add any tomatoes in my Easy Guacamole for One. I don’t like them. Sue me. 😉

Easy Guacamole for One


Yields 1

Easy Guacamole for One - Vegan, Gluten Free, Paleo

Ingredients

  • 1 ripe avocado
  • 1 tbsp. fresh lime juice
  • 1/4 tsp sea salt
  • 1 tbsp. finely diced onion
  • 2 tbsp. chopped cilantro
  • 1 garlic clove, minced
  • 1/8 tsp cayenne

Instructions

  1. In a medium mixing bowl, mash together the avocado with the fresh lime juice and sea salt. The consistency is up to you. Leave chunks or blend until smooth. Stir in the cilantro, garlic and cayenne and pop in the fridge for at least an hour.
  2. Makes plenty for a snack for one or use as a burrito or rice bowl topper.

I'm with ya on the chunky pb, but I take my guac smoooooth. :-) Can't wait for the rice bowl recipe! I still rotate your curry rice bowl in my house.
