Ingredients

  • pecan halves – Try to use the freshest pecans possible. Fresh pecans have a more pronounced and natural nutty flavor.
  • egg white – This helps the glaze stick to the nuts during the roasting process.
  • pure vanilla extract Adds that classic sweet flavor.
  • coconut sugar – I discovered through using this product that coconut sugar has a rich caramel flavor and is less refined than other granulated sugar. You could also substitute maple syrup or honey.
  • sea salt – A sprinkle of salt ties everything together. It is a must!
  • cinnamon – Gives these roasted nuts a warm and cozy vibe.
  • cayenne pepper – This is optional if you are sensitive to spice – or you plan to gift them to someone with a low-spice tolerance. We love the nice kick that the cayenne gives this glaze.

Then, pop the pan into the preheated oven for one hour, stirring well every fifteen minutes to make sure nothing is burning and then the pecans are roasting evenly.

Finally, take the sheet out of the oven and stir well once again.

Allow them to cool for ten minutes in the pan.

Expert tip

Start with fresh pecans to ensure the best flavor and texture.

Stale or old pecans may not roast as evenly or taste as good.

Recipe variations

  • For an adult twist add a splash of bourbon for a rich and deep flavor.
  • Incorporate ground chipotle pepper or smoked paprika into the glaze for a smoky, barbecue-like flavor that’s perfect for snacking or adding a twist to salads.
  • Experiment with different nuts like cashews, pistachios, or almonds. Just be mindful of cooking times as they may vary.

Serving suggestions

  • Give these pecans as homemade presents for friends and family. Make them gift-worthy! Add them to a cute mason jar, wrap them in a classy ribbon, and label them using elegant gift tags.
  • Portion the nuts out into little bowls and set them out during parties for a tasty snack station.
  • Sprinkle a few handfuls around a charcuterie board to add some texture and crunch.
  • Toss a handful on an Arugula Salad for a great appetizer or overtop some Pineapple Frozen Yogurt for a really yummy dessert.

FAQS

Can I make this recipe without egg whites?

Yes, you can make egg-free versions by using aquafaba – the liquid from canned chickpeas. This can help achieve a similar binding effect.

How do I prevent my pecans from sticking together after baking?

Allow them to cool completely on the baking sheet before breaking them apart. Then gently break them apart.

Storage tips
