Ingredients

  • boneless skinless chicken breasts
  • onions – sliced thin 
  • mayo – have you tried homemade mayonnaise?
  • parmesan cheese – this makes your delicious crust!
  • garlic powder
  • salt + pepper

Instructions for this recipe

First, preheat the oven and grease an oven-proof casserole dish. You can use melted butter and olive oil or cooking spray.

Second, place the breasts in the dish in a single layer and season with a few pinches of sea salt and a couple of grinds of fresh pepper. Set this aside.

Next, make the mixture for the parmesan crust.

Then, in a shallow bowl mix together the onions, mayo, parmesan cheese, and garlic powder.

Next, add an even dollop of the cheese mixture to each chicken breast and spread it evenly to fully cover the surface of the chicken.

Finally, place the pan in the oven and bake until the chicken is golden brown, about 45 minutes.

You can also use a meat thermometer to ensure it is fully cooked.

  • Preheat the oven to 375 and grease an 8×8 oven-proof casserole dish – I use an avocado spray. Place the chicken breasts in the dish and season with sea salt and fresh pepper. Set aside.
