First, heat the oil and sweat down the onions and celery. Next, add in the chopped potatoes.

Then add the cauliflower and broth and bring the mixture to a boil.

Next, reduce the heat and simmer for 20 to 25 minutes until the potatoes and cauliflower are tender.

Then, using an immersion blender, blend until smooth. Finally, stir in the coconut milk and add salt and pepper to taste.

Ladle into bowls and add toppings. Enjoy warm.
