CHOCOLATE CHIP COOKIE DOUGH PROTEIN BALLS – INGREDIENTS

Easy recipes that are prepped up in five minutes flat are my style. I just used my spatula to give this a good old-fashioned mixing.

I like to pop the mixture into the fridge before rolling it into balls. Chilling it makes the balls much easier to roll out.

FAQ’S, TIPS AND SUBSTITUTIONS

  • What is the best protein powder for energy balls? Personally, after making literally thousands of balls, my go-to is an organic grass-fed whey protein powder. I find that it holds up the best and gives you that chewy, buttery cookie dough mouth feel. But if you prefer vegan cookie dough protein balls I recommend Arbonne or Sunwarrior. They both have a fantastic vegan vanilla protein powder that I have used in many recipes with great success. Do YOU have a favourite protein powder? Let us know in the comments!
  • TIP! If you find your mixture a little too dry, add in a bit of water – a tablespoon at a time. Various protein powders can absorb liquid differently or your nut butter could have less oil making your batter drier. Also, adding the protein powder in 1/4 cup at a time is helpful.
  • TIP! Use a cookie scoop for nice even balls. Dip the scoop into a glass of water before scooping the mixture for less stickage.
  • Substitute peanut butter or cashew butter for the almond butter. Or use sunbutter for a nut-free treat!

Instructions

  • In a medium mixing bowl, stir together the almond butter, maple syrup, and vanilla. Then stir in the coconut.
  • Next add in the protein powder, 1/4 cup at a time, stirring well each time. Fold in the chocolate chips. Pop the bowl into the fridge for 10-15 minutes to chill a bit. This will make it easier to roll into balls.
  • Line a cookie sheet with parchment paper.
  • Using a small cookie scoop, scoop heaping tablespoon-sized balls onto the parchment-lined baking sheet. Dip the scoop into water between scoops if it starts to stick. Roll the balls in your palms to smooth them.
  • Chill in the freezer for 15-20 minutes then store in a sealed container in the fridge or freezer for up to a week.

I used fresh ground almonds as a substitute for almond butter and it turned out a lot dryer and bulkier. It still taste good, not powdery, but not as moist. I added a little extra syrup, no more then 1/4 cup, and vanilla to give it some extra hold and flavor. Everything else remained the same. These changes made it yield 23 balls instead.

Ooh! Usually, when I add protein powder into desserts or fudge I’m too scared to use too much of it…but you’ve got a cup and a half here and they look SO good.

    1. SO good! Excellent texture and it does make like fifteen or sixteen of them. 😉 I enjoy them out of the freezer. We’ve decided that it’s kinda like marzipan. If that makes sense? Hope you like ’em!

I’m in the middle on protein powder too. I find a lot of them just have such an artificial taste! I bought a Sprout Living protein powder at Anise Apothecary that I like though. And it’s vanilla flavoured, so it would be perfect in these balls! I like nuts in mine too. 😉

    1. Ha! Glad I’m not alone. 😉

Yes, I go back and forth on the powder. I could never just have protein and water. It needs to be background.
