Full disclosure, I am not a vegan.

I am however, a healthy eater and there is no denying that so many vegan dishes are chock-full of health promoting ingredients which is why I love them and prepare vegan meals regularly.

A big trend in vegan eating is to make popular non-vegan dishes into vegan ones. This is something I strive for with most of meals and snacks, vegan or not. Take something that you may have thought you would not be able to enjoy because of it’s unhealthy ingredients and brainstorm ways that you can prepare it with healthier alternatives. Think spelt or quinoa flour over bleached and processed white flour or dark chocolate instead of milk chocolate or brown rice over white rice. You get the picture.

This post is dedicated to the indulgent Caesar Salad. The traditional version is full of oil, cheese and bacon. It does sneak in some lettuce to give it that salad status but let’s be honest, there’s not a whole bunch of nutrition going on here. This vegan version will please your palate as well as provide you with valuable nutrients.

HOW TO MAKE VEGAN CAESAR SALAD DRESSING – Step by Step

Start by soaking 1/2 cup of cashews in lightly salted water for about 2 hours. The purpose of soaking the cashews is too neutralize enzyme inhibitors and to help encourage the production of beneficial enzymes. These beneficial enzymes will increase many vitamins, especially B’s. It also makes the cashews easier to digest and the nutrients are more easily absorbed. Boom!

Combine the soaked cashews with water and blend until smooth. Then store the blender in the fridge for another 2 hours for the mixture to thicken.

Once it’s been thickened up in the fridge add in the rest of the seasonings. One of the ‘secret’ ingredients is nutritional yeast.

Nutritional yeast is a favourite in the vegan community for mimicking the flavour of cheese. I know that it’s a popular ingredient on kale chips to give them a nacho chip like flavour. You can find it at the Bulk Barn.

Add in some fresh lemon juice, garlic powder, sea salt and lots of ground pepper and give it all a good blitz in the blender until it is smooth and creamy.

Pour this over some fresh, crisp lettuce like romaine and you are good to go. Guilt free but not flavour free. 🙂
