Chop up all of the veggies.
Chop up the mint. You will be using mint in both the salad and in the dressing.
Chop the romaine lettuce and add it to a large mixing bowl. Add the chopped mint for the salad.
Add the dressing ingredients to a small mason jar with a lid and shake really well.
Break the pita chips in to bite sized pieces.
Add the chopped veggies to the large mixing bowl and pour the dressing overtop. Mix well - I use my hands - then lightly fold in the pita chips. Serve!
