Start by whisking together the dry ingredients in a mixing bowl.

Then, stir in the maple syrup, coconut oil, lemon juice, and vanilla. Keep mixing until a dough forms.

Once the dough has formed, gently fold in the lemon zest.

Roll heaping tablespoons of the cookie dough and place them on the lined baking sheet. Flatten it into an even, round cookie shape.

Bake and cool the cookies completely.

Meanwhile, whisk together the glaze ingredients.

Set up a station to frost the cookies.

Drizzle a teaspoon of the glaze on top of each cookie and sprinkle with lemon zest to finish them off.
