Start by roasting cooked lentils for the topping. These are seasoned with garlic, salt and pepper.

Add the butternut squash and to salted water and bring to a boil. Cook until tender, 5-6 minutes. Drain and set aside.

Return the pot to the heat, add the yogurt, milk, and seasonings. Stir frequently until it has thickened slightly.

Add the cooked butternut squash. Remove from the heat and and blend into a smooth sauce.

Stir the sauce with cooked pasta and top with the crispy lentils.
