Start by prepping the ingredients. First shred the cooked chicken.

Next, chop the apple and roasted almonds and thinly slice the green onions.

2.

Finally, add all of the ingredients to a large bowl along with the Greek yogurt and mustard. Sprinkle with a bit of salt and pepper. Toss it all together.

3.

Top slices of cucumber with the chicken salad for appetizers at a potluck.

4. 

Spread the chicken mixture over a bed of mixed greens and fresh herbs (chopped parsley and fresh dill are delicious!) and enjoy it as a salad.
