Start by chopping the veggies and basil. I LOVE the aromatherapy from fresh herbs. Remember to inhale deeply while chopping.
Add all of the salad ingredients to a large mixing bowl. Using leftover cooked rice and chicken makes this so easy.
Add the dressing ingredients to a small mason jar and shake well. This is a simple and healthy dressing.
Pour the dressing over the salad ingredients and give everything a good stir to combine.
You can enjoy right away but this salad tastes even better after it has had time to chill and the flavors meld together.
