Place all of the dressing ingredients in a small jar with a lid and give it a good shake. Set aside.

Next, place the quinoa in a mesh strainer and rinse it well under cold water. This is an important step to remove a bitter coating.

Cook the quinoa then fluff with a fork. Set aside to cool while you prep the veggies and herbs.

Stir the chopped herbs + veg into the quinoa then stir in the dressing. Sprinkle on the hemp seeds and serve.
