Start by cooking the brown rice. While the rice is cooking brown the beef in a large skillet. Drain the cooked beef on a paper towel lined plate.

Add the onions, cook until soft then add the garlic. Next add the beef back into the pan. Add the tomatoes, salsa, rice and beans.

Transfer the beef mixture to a prepared casserole dish.

Top the mixture with gratd cheese and chopped bell peppers. Use jalapenos if you like the heat!

Place the dish in the oven and bake for 25 minutes. Turn on the broiler and broil for 2-3 minutes until the cheese is bubbling.

5. 

Cut into portions and serve warm. Cover any leftovers and store in the fridge. This recipe reheats really well making it great for meal prep.
