First, cut the bell peppers in half and remove the seeds. Rub the peppers with olive oil and place them in a baking dish. Pop the dish in the oven to roast.

Meanwhile, get started in the filling! First, cook the quinoa.

Next, warm olive oil in a large skillet over medium heat. Add the onions and sauté until softened.

3.

Then, add in the chopped chipotle. I love the smoky flavor!

Next, stir in the black beans with the onion mixture. Then add the enchilada sauce.

5. 

Add equal parts of the chipotle quinoa mixture to the bell peppers shells. Sprinkle with shredded cheese and pop back into the oven for the cheese to melt.
