- 1 can tuna drained
- 1 avocado chopped into small pieces
- 1 lime juiced
- 1 hard cooked egg chopped into pieces
- 1 tbsp. diced shallot or onion
- 1 stalk celery thinly sliced on the diagonal
- 1/4 cup fresh chopped parsley
- 1/2 tbsp. mustard
- sea salt & pepper to taste
In a medium sized mixing bowl add the avocado and lime juice. Stir well. This helps to keep the avocado from browning.
Add the remaining ingredients and stir well again
Serve over greens, or as a sandwich
