  • Mix the oats, pecans, and coconut - in a large bowl.
  • Add the wet ingredients - peanut butter and maple syrup - and stir again.
  • Stir the chocolate chips into the oat mixture.
  • Using a cookie scoop, roll into heaping tablespoon-sized balls, and place on a parchment-lined baking sheet.
  • Place the tray in the fridge or freezer for an hour to set.
  • Store covered in the fridge or freezer.

Notes

  • Use natural peanut butter. There should only be peanuts listed on the label. A fresh jar is best as the natural oils help to bind the balls together so they aren't crumbly.
  • Substitute almond butter for the peanut butter for a different flavor.
  • Sprinkle in spices such as cinnamon and nutmeg to turn these into pecan pie balls.
