Ingredients

Instructions

  • Heat a heaping teaspoon of butter and one of oil in a skillet over medium low heat.
  • Meanwhile, in a large bowl, whisk together the eggs, milk, syrup, vanilla and salt. I then worked in batches to cook it up.
  • Dip a piece in the egg/milk mixture, flip once then transfer to the heated pan, adding more until the pan is full without being crowded. This depends on the size of the pan you use.
  • Move the pieces around a bit to make sure there is no stickage.
  • Flip after 2-3 minutes and cook on the other side for another 2-3 minutes. Continue with the remaining pieces, adding more butter and oil to the pan, if needed.
  • Serve warm.

Notes

  • if you want everyone to eat together place the cooked slices on a wire rack on a rimmed baking sheet in a single layer and keep the slices warm in the oven until ready to serve.
  • make this for two - save half the loaf for tomorrow! It comes out even better if the bread is a tad stale. Just half the rest of the recipe.
  • add cinnamon or orange zest to the egg mixture for a gourmet flavor
  • serve with maple syrup, berries, cream cheese sweetened with brown sugar or custard.
  • for festive holidays use your best dishes and play Christmas music in the background.
  • add protein with a side of bacon or low sodium ham.
