  • Preheat the oven to 400° and line a baking sheet with parchment paper.
  • Then, drain and rinse the chickpeas and carefully peel off the outer layer of skin.
  • Next, spread them evenly onto the prepared baking sheet and toss them with one tablespoon of the olive oil. Then, pop the baking sheet into the oven.
  • Roast for 40-50 minutes, stirring every 10-15 minutes and watching that they don't burn.
  • Meanwhile, add the spices to a small bowl and stir them together.
  • Remove the tray from the oven and toss the chickpeas with one teaspoon of the olive oil. Then sprinkle on the spice blend and stir well to coat them.

Notes

To Store: These chickpeas lose their crunch pretty quickly, so they are best enjoyed right away. However, you can store them in an airtight container or ziptop bag, ensuring that the air has been fully squeezed out to prevent any moisture. The moisture will make these soggy. You can also pop them back into the oven to crisp them up again if desired.
