Creamy Goat Cheese Pasta - Ready in Under 20 Minutes!

This simple Creamy Goat Cheese Pasta is a healthy vegetarian dish using fresh ingredients. It is easy and quick to prep. Perfect for busy weeknights!

Ingredients

  • package of brown rice spaghetti - or enough pasta for 2 people
  • ½ lemon zested and juiced
  • 3 tbsp olive oil
  • ¼ cup goat cheese
  • 2-3 cups greens - either spinach or arugula
  • sea salt & pepper to taste

Instructions

  • Cook pasta to package instructions.
  • Meanwhile, in a large bowl, stir together the oil, lemon juice, sprinkle of sea salt, and lots of fresh pepper. Add in the goat cheese, stir then add in the greens.
  • Spoon 2-3 tablespoons of the hot pasta water over the greens and stir again.
  • Pour the cooked and drained spaghetti in the same bowl as the dressing and arugula and toss well.
  • Portion into 2 bowls.
  • Garnish each with lemon zest and enjoy!

Notes

Serving Suggestions and Substitutions:

  • Top with parmesan cheese and red pepper flakes
  • Add chopped herbs like fresh basil or parsley to taste
  • Toss in cherry tomatoes or grape tomatoes
  • Substitute the greens for cooked veggies like peas, or asparagus
  • Saute onions and garlic and add to the sauce
  • Add protein like grilled chicken or shrimp
