⅓package of brown rice spaghetti - or enough pasta for 2 people
½lemon zested and juiced
3tbspolive oil
¼cupgoat cheese
2-3cupsgreens - either spinach or arugula
sea salt & pepperto taste
Instructions
Cook pasta to package instructions.
Meanwhile, in a large bowl, stir together the oil, lemon juice, sprinkle of sea salt, and lots of fresh pepper. Add in the goat cheese, stir then add in the greens.
Spoon 2-3 tablespoons of the hot pasta water over the greens and stir again.
Pour the cooked and drained spaghetti in the same bowl as the dressing and arugula and toss well.
Portion into 2 bowls.
Garnish each with lemon zest and enjoy!
Notes
Serving Suggestions and Substitutions:
Top with parmesan cheese and red pepper flakes
Add chopped herbs like fresh basil or parsley to taste
Toss in cherry tomatoes or grape tomatoes
Substitute the greens for cooked veggies like peas, or asparagus
