This healthy, no bake Chocolate Chip Cookie Dough Protein Balls recipe has that sweet and chewy texture you love. Featuring almond butter, coconut, and of course, protein powder. Super easy to make!
In a medium mixing bowl, stir together the almond butter, maple syrup, and vanilla. Then stir in the coconut.
Next add in the protein powder, 1/4 cup at a time, stirring well each time. Fold in the chocolate chips. Pop the bowl into the fridge for 10-15 minutes to chill a bit. This will make it easier to roll into balls.
Line a cookie sheet with parchment paper.
Using a small cookie scoop, scoop heaping tablespoon-sized balls onto the parchment-lined baking sheet. Dip the scoop into water between scoops if it starts to stick. Roll the balls in your palms to smooth them.
Chill in the freezer for 15-20 minutes then store in a sealed container in the fridge or freezer for up to a week.
