  • In a medium mixing bowl, stir together the almond butter, maple syrup, and vanilla. Then stir in the coconut.
  • Next add in the protein powder, 1/4 cup at a time, stirring well each time. Fold in the chocolate chips. Pop the bowl into the fridge for 10-15 minutes to chill a bit. This will make it easier to roll into balls.
  • Line a cookie sheet with parchment paper.
  • Using a small cookie scoop, scoop heaping tablespoon-sized balls onto the parchment-lined baking sheet. Dip the scoop into water between scoops if it starts to stick. Roll the balls in your palms to smooth them.
  • Chill in the freezer for 15-20 minutes then store in a sealed container in the fridge or freezer for up to a week.
