Heat the oven to 400°, and line a large baking sheet with parchment paper. Set it aside.
Next, over low heat in a small saucepan, melt together the coconut oil, maple syrup, salt, and cayenne pepper if using.
Meanwhile, slice your potatoes into thin rounds, a ¼ inch thick, and transfer the slices to the prepared baking sheet.
Pour the maple mixture over the potatoes and toss well to coat them. Arrange the potatoes in an even layer spaced out on the sheet.
Then place the baking sheet in the oven. Roast for 8-10 minutes per side until browned along the edges and soft in the center.
Serve warm.
