  • Heat the oven to 400°, and line a large baking sheet with parchment paper. Set it aside.
  • Next, over low heat in a small saucepan, melt together the coconut oil, maple syrup, salt, and cayenne pepper if using.
  • Meanwhile, slice your potatoes into thin rounds, a ¼ inch thick, and transfer the slices to the prepared baking sheet.
  • Pour the maple mixture over the potatoes and toss well to coat them. Arrange the potatoes in an even layer spaced out on the sheet.
  • Then place the baking sheet in the oven. Roast for 8-10 minutes per side until browned along the edges and soft in the center.
  • Serve warm.
