In a small mixing bowl, stir together the oats, flour, coconut sugar, and salt. Pour the coconut oil over and stir well, coating the oats. Place in the fridge.
Peel and chop the apples into 1-inch chunks. Place the chopped apples into the liner pot. Sprinkle them with the cinnamon and pour the maple syrup over top. Cover with the water.
Take the oat mixture out of the fridge and drop it evenly over top of the apples.
Lock the lid in place and seal the valve. Press manual and cook on high pressure for 8 minutes. Allow the pressure to fully release naturally. Carefully remove the lid.
Serve the apple crumble warm.
