Sweet Potato Breakfast Bowl

This Sweet Potato Breakfast Bowl recipe is my go-to whole30 or paleo breakfast. If you miss having oatmeal, this vegan sweet potato breakfast bowl is for you!

Ingredients

  • 1 small ripe banana
  • 1 small cooked sweet potato
  • 1/2 tsp ground cinnamon
  • toppings - ground flaxseed, chia seeds, nuts, almond butter

Instructions

  • Using a fork, mash the ripe banana in a bowl until most of the little lumps are gone. Remove the peel and add the cooked sweet potato and cinnamon and mash again to break up the potato.
  • If your potato was hot, add your toppings and enjoy! If the potato was prepped in advance and was cool add the mixture to a small saucepan over medium-low heat and stir until it reaches your desired temperature.
