  • Preheat the oven to 350° and line a 9x9 baking dish with parchment paper. Set the dish aside.
  • In a large mixing bowl, whisk together the almond flour, coconut sugar, baking powder, salt, and cinnamon. Set aside.
  • In another mixing bowl, mash the bananas. Add the eggs and vanilla and mix again to combine.
  • Add the banana mixture to the almond flour mixture and stir to combine. Fold in the chocolate chips.
  • Pour the batter into the prepared baking dish and spread it out evenly with a spatula. Sprinkle the top with the reserved chocolate chips.
  • Place the dish in the preheated oven and bake for 25-30 minutes until golden brown.
  • Allow the banana bars to cool in the pan for 15 minutes then transfer to a wire rack to cool completely. Cut into bars.

Notes

  • TIP! Use room-temperature eggs so your batter blends smoothly. If you forgot to take them out pop the eggs into a bowl of warm water for 5 minutes.
  • Check the label of the dark chocolate chips to ensure there are no milk products so this recipe remains dairy-free.
  • Store in an airtight container at room temperature for up to 3 days or store in the fridge for up to a week.
  • Skip the chocolate chips on top and spread a cream cheese frosting on instead for a more cake like experience. Just wait until the banana bars have cooled before adding any frosting.
  • Substitute honey or maple syrup for the coconut sugar. Simply mix it in with the wet ingredients instead.
