  • Line a baking sheet with parchment and set aside.
  • Chop the apple into 4, then 8, then 16 chunks and stick a toothpick in each. Line them up on the prepared baking sheet.
  • In a small saucepan melt together the almond butter and brown rice syrup over medium-low heat. You want the mixture to be fairly liquid and creamy.
  • Remove from the heat and stir in the vanilla.
  • Working quickly, with a spoon cover the apple slices with the caramel.
  • Leave in the fridge for 15 minutes to set.
  • Enjoy immediately. The caramel will melt at room temperature so don't leave these out!

Notes

  • use a honeycrisp apple for a sweeter treat or a granny smith apple if you want a bit of a sour pucker
