Switch it up from the usual peanut butter and try these super tasty No Bake Sunbutter Energy Bars. The slightly salty sunflower seed butter is the perfect pair for the natural sweetness of local honey.

  • Line a 9 x 9 dish with parchment and set aside,
  • Combine oats, flax, and salt in a large mixing bowl and set aside.
  • In a small saucepan, over medium-low heat, melt together the sunflower seed butter, and the honey, stirring until smooth. Remove from heat and stir in the vanilla.
  • Pour the sunbutter mixture over the oat mixture and stir well to combine.
  • Press really well into the lined dish and refrigerate for an hour.
  • Slice into bars and store, covered in the fridge.
