How to Make Chocolate Covered Blueberries

  • In a small saucepan, add chocolate chips and coconut oil and set over low heat, stirring until melted and glossy.
  • Remove from heat and add the dried blueberries. Stir them well to coat each one.
  • Spread them onto a parchment-lined baking sheet and place them in the freezer for about thirty minutes to harden. Transfer to a Ziploc bag and store in the freezer.

Notes

  • I recommend keeping these in a cool place like the fridge or freezer so they don't get melty. They are much better cold from the fridge or freezer.
  • If you want to make these in the microwave melt the chocolate and coconut oil together in a microwave-safe bowl and microwave it in 5 or 10 second intervals, stirring in between until it is nice and glossy.
  • White chocolate would be a fun substitution! Or try other dried fruit like raspberriesstrawberries, and bananas. Even candied lemons or limes would be delish dipped in the chocolate.
