In a large mixing bowl, stir together the peanut butter and maple syrup.
Add in the cacao powder and coconut flour and blend them together until a dough forms. Stir in the chocolate chips.
Pop the bowl into the fridge for 30 minutes. This makes the dough firmer and much easier to roll into balls.
Scoop tablespoon-sized balls onto a baking sheet lined with parchment. Roll them into firm balls then place the baking sheet into the freezer for 45 minutes.
Transfer them to a covered container and they will keep in the fridge or freezer for up a week.

Be sure to refrigerate the dough before rolling it into bites. It is much easier to work with when chilled.
Make this a double chocolate recipe! Melt chocolate chips with a teaspoon of coconut oil and dip the chilled balls in the mixture. Sprinkle with a pinch of sea salt on the tops. Chill again for 20-30 minutes.
Add walnuts for a crunchier texture. Any kind of nut will taste delicious!
Substitute honey instead of maple syrup.
Use almond butter instead of peanut butter.
Substitute the cacao for chocolate protein powder.
Add a splash of vanilla extract for added sweetness.
