Heat your oven to 350. Line a large baking sheet with parchment paper and set it aside.
Meanwhile, cut each pita bread into eight wedges and transfer the wedges to a medium bowl.
Drizzle the olive oil over the pita wedges and sprinkle in the salt. Using your fingers, toss the pita bread wedges to coat them in the oil and salt.
Arrange the wedges on the prepared baking sheet so they are evenly spaced and not overlapping.
Bake for eight to ten minutes. Let cool for two to three minutes in the pan.
These are best enjoyed right away but may keep in an air-tight container for one to two days.
