First, preheat the oven and line a cookie sheet with parchment paper. Place the almonds in a bowl.

Meanwhile, warm the maple syrup in a small saucepan. Then, pour the warmed syrup over the almonds and stir to coat them.

Next, make the cinnamon sugar mixture by combining the cinnamon, coconut sugar, and salt in a little bowl. You can use a fork or a little whisk to do this.

Sprinkle the cinnamon sugar onto the almonds and stir again. Give them a good stir so that that each almond has been coated.

4. 

Finally, spread them out on the parchment lined sheet into a single layer. Give them space as this helps them to roast better. Don't overcrowd the baking sheet.

When the cinnamon coated almonds come out of the oven they are deep brown in colour, almost caramelized. Let them cool to room temperature for maximum crunchiness.
