  Start by heating the olive oil and butter in a large soup pot and toss in the chopped vegetables.

Season them with salt and pepper and saute, stirring, until they have softened.

Next, stir in the minced garlic and the dried thyme, and let that cook for another minute.

Finally, add the chicken and broth and bring the pot to a boil. Reduce to medium heat and let the pot simmer for about 30 minutes.

4.

After the simmer, remove the chicken and shred it. Add the shredded chicken back into the pot along with the quinoa - be sure to rinse it off first.

5.

Add the chopped parsley and simmer for ten more minutes.

6.

Ladle into bowls and enjoy warm.
