This recipe is the perfect way to use leftover spaghetti squash. I find oven roasting is the easiest way to prep it.

1.

I store the leftover cooked and shredded spaghetti squash in an airtight container in the fridge.

2.

Press the water out of the squash with paper towels. Form patties (2 tablespoons) by pressing the squash firmly between your palms. Place the patties gently on a warmed skillet.

3.

Let cook for 5-7 minutes per side. Only flip these once if possible to get the nice browned effect.

Transfer to paper towels to drain, then serve warm. I LOVE these with eggs over easy.
