Instructions

  • Preheat your oven to 375° and grease an 11 x 8 baking dish.
  • Place the filling ingredients into the greased baking dish and toss well to coat the peaches. Set the dish aside.
  • Add the oats, almond flour, chopped pecans, coconut sugar, sea salt, and cinnamon to a large mixing bowl. Stir everything well.
  • Pour the melted butter (or coconut oil), maple syrup, and vanilla over the oat mixture and stir well to coat everything.
  • Crumble the oat mixture evenly on top of the peaches in the baking dish.
  • Place the dish in the preheated oven and bake for 30-35 minutes.
    If the top starts to brown too quickly, cover the dish with foil for the remaining time. 
  • Remove from the oven and cool for 10-15 minutes before serving.
