Pecan Pie Larabars

The only recipe you'll ever need to make a delicious homemade Pecan Pie Larabar copycat. This healthy, no-bake snack has no artificial sweeteners, zero refined sugar, and is so easy to make in minutes.

  • Add the pecans and almonds to a food processor and pulse them until they are broken into fine pieces.
  • Add the dates, vanilla, and salt to the food processor.
  • Process until a sticky, dough-like texture begins to form. The mixture should stick together when pressed between your fingers.
  • Line a loaf pan with parchment paper and press the mixture evenly into the pan. Using a flat spatula helps to firmly flatten the mixture out.
  • Place the pan in the freezer for 15-20 minutes to harden. Then slice into bars or squares.

Storing and freezing

These bars will get soft at room temperature so it is best to keep them in the refrigerator in an airtight container.
They can be frozen for up to 3 months.  

Expert tip

Make sure the dates are soft and moist! This makes it so much easier to blend them in the food processor. If your dates are on the harder side, soak them in warm water for about 10 minutes and drain before blending them.
