Instructions

  • Preheat the oven to 400°.
  • Add the filling ingredients into a baking dish and stir it all together. Set the dish aside.
  • In a large mixing bowl, whisk together the almond flour, chopped pecans, baking powder, and salt.
  • Then, stir in the coconut oil and maple syrup.
  • Next, add the eggs to the bowl and stir until combined.
  • Then, pour in the milk - bit by bit - stirring until a sticky dough forms.
  • Drop 6 even scoops on top of the filling in the baking dish then 'cobble' it together, leaving a few patches of the peach filling uncovered. Sprinkle the top lightly with coconut sugar.
  • Bake for 45 minutes until golden brown and bubbling.
  • Keep an eye on the cobbler and if the topping starts to brown too quickly cover the dish lightly with foil and continue baking.
  • Serve warm.

Storage and reheating

Store any leftovers in an airtight container and store it in the fridge for up to 2 days.
Reheat in either a microwave or oven.
To reheat in the oven - preheat the oven to 350 and place the cobbler in an oven-safe dish. Cover it with foil and bake for 10-15 minutes until warm.
