Savor the blend of juicy peaches and rich almond flour in our Healthy Peach Cobbler. This guilt-free dessert is crafted with wholesome ingredients, providing a nutritious twist on a classic favorite.
Add the filling ingredients into a baking dish and stir it all together. Set the dish aside.
In a large mixing bowl, whisk together the almond flour, chopped pecans, baking powder, and salt.
Then, stir in the coconut oil and maple syrup.
Next, add the eggs to the bowl and stir until combined.
Then, pour in the milk - bit by bit - stirring until a sticky dough forms.
Drop 6 even scoops on top of the filling in the baking dish then 'cobble' it together, leaving a few patches of the peach filling uncovered. Sprinkle the top lightly with coconut sugar.
Bake for 45 minutes until golden brown and bubbling.
Keep an eye on the cobbler and if the topping starts to brown too quickly cover the dish lightly with foil and continue baking.
Serve warm.

Store any leftovers in an airtight container and store it in the fridge for up to 2 days.Reheat in either a microwave or oven.To reheat in the oven - preheat the oven to 350 and place the cobbler in an oven-safe dish. Cover it with foil and bake for 10-15 minutes until warm.
