This frozen sugar cookie dough is perfect for those times when you just want a cookie or two instead of making (and eating) an entire batch. This recipe is so easy to make and features wholesome ingredients and less refined sugar for a healthier, but still super delicious option.
Line a baking sheet with parchment paper and set it aside.
Add the almond flour, baking powder, and salt to a medium mixing bowl and whisk them together.
Then add the melted oil, maple syrup, and vanilla and stir until a dough forms.
Using a small cookie scoop, portion out 15 balls of dough onto the prepared baking sheet.
Next, using the back of a spoon or your fingers, flatten the balls of dough into cookie shapes.
Pop the tray into the freezer for 30 minutes to an hour to freeze them solid.
Once frozen, transfer the frozen cookie dough to an airtight container or freezer bag.
Store in the freezer for up to 3 months.
