Preheat the oven to 400°.
Add the filling ingredients into a baking dish and stir it all together. Set the dish aside.
In a large mixing bowl, whisk together the almond flour, chopped pecans, baking powder, and salt.
Then, stir in the coconut oil and maple syrup.
Next, add the eggs to the bowl and stir until combined.
Then, pour in the milk - bit by bit - stirring until a sticky dough forms.
Drop 6 even scoops on top of the filling in the baking dish then 'cobble' it together, leaving a few patches of the peach filling uncovered. Sprinkle the top lightly with coconut sugar.
Bake for 45 minutes until golden brown and bubbling.
Keep an eye on the cobbler and if the topping starts to brown too quickly cover the dish lightly with foil and continue baking.
Serve warm.
