Ingredients

  • 2 ripe bananas *cut into slices and frozen

Instructions

  • Slice ripe bananas into discs and freeze on a parchment-lined baking sheet or in a freezer-safe container with parchment in between the layers.
  • In a food processor, blitz frozen bananas until the creamy consistency of soft serve ice cream. Scrape the sides down every so often for even blending.
  • Enjoy immediately or store in the freezer for up to 3 months.

Notes

  • TIP! Using brown bananas will give your ice cream a sweeter more caramelized flavor. If they aren't ripe the soft serve could taste more earthy or bitter.
  • Store leftovers in an airtight container in the freezer for up to 3 months. It will be super hard straight out of the freezer so leave it a room temp for 10-15 minutes before eating.
  • If you don't have a food processor a high-speed blender such as a Vitamix would work also.
  • Adding a tsp of vanilla extract and a pinch of salt will give you a classic ice cream taste.
  • Spin this recipe into a chocolate nice cream by adding a tablespoon of cocoa powder.
  • Add a tablespoon of nut butter to make peanut butter nice cream.
  • Toss in a 1/4 cup of frozen strawberries or mango for a fruity variation.
  • Sprinkle toppings like shredded coconut, roasted peanuts, or caramel sauce.
