Stack the pita bread on top of each other and place them on a cutting board. Using a sharp knife, slice the pita bread evenly into wedges and set aside.
Place a large skillet over medium heat and add the oil. Once the oil has warmed, add the wedges of pita bread and cook 2-3 minutes until browned, then flip and cook for another 2-3 to brown the other side.
Serve warm with dips like hummus or tzatziki or crumble into salads as a substitute for croutons.
