Protein Granola

This Protein Granola is a great way to fuel your body while keeping you full and satisfied. Made with whole grains, nuts, seeds, and clean protein powder this recipe provides you with a healthy source of energy.

  • Heat the oven to 300° and line a baking sheet with parchment paper.300 °F
  • In a large mixing bowl, stir together the oats, protein powder, cinnamon, ground flaxseeds, and chopped nuts. Set this bowl aside.
  • Over medium-low heat in a small saucepan, melt together the maple syrup, coconut oil, and peanut butter. Stir until smooth.
  • Remove from the heat and pour the peanut butter mixture over the oats mixture in the large mixing bowl. Stir to combine and coat everything well.
  • Spread the mixture onto the prepared baking sheet into an even layer.
  • Bake for 15 minutes, then stir the granola. Bake for another 10-15 minutes until golden.
  • Remove the granola from the oven and sprinkle the dried cranberries on top and press them into the warm mixture.
  • Let the granola cool in the pan for 15-20 minutes.
  • Break into clusters and store in an airtight container for up to a week.

Notes

  • Is this granola vegan? Yes! Vegans can rejoice in this one as we use a plant-based protein powder. I recommend the Ora brand - So Lean So Clean in vanilla flavor.
  • Is this recipe gluten-free? Ensure it reads certified gluten-free on the label of the oats for allergy concerns and you are good to go.  
  • Store this granola at room temperature in a sealed airtight container for up to a week.
  • Substitute honey as the sweetener instead of maple syrup - it just won't be considered vegan.
  • Use your favorite nuts - we love pecans and cashews but walnuts and hazelnuts are also super delicious.
  • Substitute the ground flax for any other seeds such as pumpkin seeds, hemp seeds, or sunflower seeds.
