Start by preheating the oven to 300° and line a baking sheet with parchment paper.
Next, add the pepitas to a small bowl. Add the rest of the ingredients and stir it well, coating the seeds.
Then, transfer the coated pepitas onto the prepared baking sheet and spread them into an even layer.
Roast in the oven for 10-15 minutes, stirring them a couple of times to make sure nothing is sticking or burning.
Remove them from the oven and let them cool in the pan for 10 minutes.
