Why we love this recipe

  • Pepitas are a little nutrition powerhouse! Not only are they a source of protein, zinc, fiber, vitamin A, and vitamin C, but they also contain a good amount of monounsaturated and polyunsaturated fat, which are considered heart-healthy fats.
  • The flavor combo offers a sweet, spicy, and salty taste experience that makes them a perfect snack. We also love how versatile they are with so many ways to enjoy them.
  • This recipe is also naturally gluten-free and vegan. Bonus!

Ingredients

  • raw pepitas – also known as raw pumpkin seeds. Because they will be roasted you need to use raw seeds.

  • tajin – this is a Mexican chili powder blend that has dehydrated chili peppers and lime. You can buy Tajin on Amazon or use regular chili powder.

Expert tip

Use freshly squeezed lime juice! The fresh juice will add a vibrant citrus flavor that complements the spices well.

Recipe variations

  • Infuse a smoky vibe into your pepitas by adding chipotle powder or smoked paprika to the seasoning mix. This variation adds a rich, earthy flavor that pairs well with the chili lime combination.
  • Toss the chili lime pepitas with some dried mango pieces for a sweet and spicy combination. The chewy and fruity mango provides a pleasant contrast to the crunchy pepitas.
  • Expand the flavor profile by incorporating additional spices such as cumin, garlic powder, or a pinch of Mexican oregano to the seasoning blend to enhance the savory notes.

Serving suggestions

  • These are a perfect healthy snack simply on their own. They have a satisfying crunch and tons of flavor. Tote them in a small sealed container or resealable bags for a convenient on-the-go snack.
  • Use as a garnish for soups and stews. They can be a fantastic topping for creamy vegetable soups, chili, or tortilla soup, adding texture and a pop of flavor.
  • Sprinkle pepitas over salads to add a delightful crunch and zesty flavor. They work well with green salads, grain salads, or even pasta salads.
  • Upgrade your breakfast by sprinkling on top of avocado toast. They add a fantastic texture and flavor contrast to the creamy avocado.
  • Include chili lime pepitas on a cheese or charcuterie board as a unique and flavorful element. They pair well with various cheeses, cured meats, nuts, and other accompaniments. We also love these Spiced Walnuts on a charcuterie!
