This easy chicken bites recipe is a total favorite that I make weekly. Sometimes, simple is the best approach, and this chicken dinner idea could not be simpler. It goes with everything and is picky-eater approved.
Start by patting the chicken dry with paper towels.
Cut the chicken breast into 2-inch pieces. Try to keep them close to the same size for even cooking.
Season the chicken pieces liberally with salt and ground pepper.
Then, place a large skillet over medium heat and add the ghee/butter and oil to the pan.
Once it is hot, add the chicken pieces into the pan, leaving a bit of space between them so they brown nicely. It is best if they don't touch.
Cook for 10-12 minutes, and when it is golden, flip the chicken over and cook on the other side for another 10-12 minutes. If you like them extra crispy, flip them on the other 2 sides for 2 minutes each to brown the whole piece.
