Ingredient Notes

  • Chicken – We generally use skinless, boneless chicken breasts, but skinless, boneless thighs work as well.
  • Oil – Our pick is extra virgin olive oil.
  • Ghee – Because this is a Whole30 recipe, we use ghee, but butter is great too if you aren’t concerned.
  • Salt and Pepper – A sprinkle of sea salt and black pepper is a must. Simple and delicious.

  • Cutting Board and Knife – For cutting the chicken into chunks. We have been using a Victorinox chef’s knife for years, and it is awesome.

Step 1

Start by patting the chicken dry with paper towels.

Expert Tip!

Patting the chicken dry helps achieve a lovely golden-brown color by removing surface moisture. We all want a crispy crust on the outside, and dry chicken delivers it.

Step 2

Next, cut the chicken breast into 2-inch pieces. Try to keep them close to the same size for even cooking.

Step 3

Then, season the chicken pieces liberally with salt and ground pepper. Do both sides.

Next, place a large skillet on the stove over medium heat and add the ghee/butter and oil.

Once the pan is hot, add the chicken pieces to the pan in an even layer, leaving a bit of space between them so they brown evenly. It is best if they don’t touch.

Step 5

Cook for 10-12 minutes, until golden. Flip the chicken and cook for another 10-12 minutes.

If you like extra crispy chicken bites, flip them on the other 2 sides for 2 minutes each to brown the whole piece.

Substitutions and recipe variations

Add a little warmth and color by sprinkling the chicken with smoked paprika before cooking.

Mince two garlic cloves and add them in during the last minute of cooking for a garlic butter vibe. Or just sprinkle on some garlic powder.

Save a few calories by skipping the butter/ghee and just using olive oil.

Serving suggestions

We plate it up with roasted rosemary potatoes and a lettuce salad. It is such a nice meal.

FAQS

How do I prevent the chicken from sticking to the pan?

Make sure the pan is hot before adding the chicken pieces, and don’t move them once they are in. Once they are golden, they will easily release from the hot surface.

What type of skillet is best?

We LOVE our HexClad, but cast iron and stainless steel pans are also great choices.

Storage tips

To Store: Keep any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the pan with a bit of oil until warmed through or enjoy cold in salads or sandwiches.

  • ½ tbsp ghee (for Whole30) or butter
