Slice ripe bananas into discs and freeze on a parchment-lined baking sheet or in a freezer-safe container with parchment in between the layers.
In a food processor, blitz frozen bananas until the creamy consistency of soft serve ice cream. Scrape the sides down every so often for even blending.
Enjoy immediately or store in the freezer for up to 3 months.

TIP! Using brown bananas will give your ice cream a sweeter more caramelized flavor. If they aren't ripe the soft serve could taste more earthy or bitter.
Store leftovers in an airtight container in the freezer for up to 3 months. It will be super hard straight out of the freezer so leave it a room temp for 10-15 minutes before eating.
If you don't have a food processor a high-speed blender such as a Vitamix would work also.
Adding a tsp of vanilla extract and a pinch of salt will give you a classic ice cream taste.
